This Dark Roast is rich in melanoidins and phenylindanes, compounds formed during darker roasting, with less chlorogenic acid and the lowest perceived acidity of our range.

Every harvest of Biodynamic® coffee is third-party lab tested at two accredited labs, Actlabs and Eurofins. Ochratoxin A and aflatoxins come back below the detection limit, and Biodynamic® coffee is grown without synthetic pesticides under Demeter and organic certification.

Every harvest of Biodynamic coffee is tested by independent, accredited laboratories. We publish every certificate of analysis here, unedited.
What we mean by mold free, every harvest is tested for 16 mycotoxins, the toxins mold produces. No ochratoxin A or aflatoxin has been found at or above the lab’s reporting limit in any sample we have tested. We test for the toxins mold produces rather than counting mold itself, and no test can guarantee every bean.
Because our coffee is Demeter certified Biodynamic, no synthetic pesticides, herbicides, or fungicides are permitted anywhere on the farm purity is built in at the source rather than chased after the fact.
Our lab testing therefore focuses on what actually matters for a clean cup. mycotoxins (ochratoxin A and aflatoxins), heavy metals (lead, cadmium, arsenic), and microbiological contaminants.
We use two complementary third-party laboratories: Actlabs Agriculture Division performs the 16-compound mycotoxin panel by LC-MS (covering ochratoxin A, aflatoxins B1/B2/G1/G2, DON, fumonisins, T-2, HT-2, zearalenone, and more), and Eurofins Essais Alimentairesperforms both the heavy metals panel by ICP-MS (lead, cadmium, mercury, arsenic) and the microbiological contaminants panel (E. coli, Salmonella, Listeria). Both laboratories are ISO 17025 accredited. Each certificate below identifies the performing laboratory.
